You judge a good red rose by its head, not its stem: the bud should be tight and full with no darkening on the outer petals. Ecuadorian roses have larger heads and thicker stems; local roses are smaller but more fragrant. Cut 2–3 cm off the stem at an angle, strip any leaves below the waterline and change the water daily. Red roses dislike heat — kept away from radiators and direct sun they easily last a week.
